Cumin Lime Pork Tenderloin with Roasted Corn Salsa

3 tablespoons extra-virgin olive oil

Juice from 1 lime (2 tablespoons)

2 large garlic cloves- minced

1 tablespoon ground cumin

1 teaspoon finely grated lime zest

1 teaspoon Kosher salt and ½ teaspoon ground black pepper

2 lbs pork tenderloin-trimmed



4 cups frozen roasted corn-thawed

Sweet and Spicy Glazed Salmon

4 -6 oz fresh salmon fillets


2/3 c maple syrup

½ cup soy sauce

1 teaspoon garlic chili sauce

1 tablespoon finely grated fresh ginger

4 cloves garlic, minced

1/4 cup green onion-sliced


1. Combine sauce ingredients in a medium bowl. Add salmon and turn to coat. Marinate for 20-30 minutes. Preheat oven to 425 degrees.

2. Drain salmon, reserving marinade Place salmon on sprayed or oiled sheet pan.

Have you signed up for a class....or two?

We have had some amazing classes over the last 12 days. I've personally been at...7...I think! The BBQ one was so much fun. With almost all men they had a blast (had us gals laughing!) but they really learned a lot. We are 2 college age classes in and they are learning amazing things- seriously these guys & gals are learning to really cook! On that note: starting next week for 2 weeks we are running a middle/ high school boot camp of sorts.
